Think “Progress” NOT Perfection When Building a Successful Restaurant Operation
An owner attending one of our workshops once commented on how overwhelmed he was after realizing the extent of training, systems, and people resources it takes to have a successful restaurant business. He quipped, "If perfection is a requirement for success, we'll never get there."
The truth is perfection is impossible. The key to a successful restaurant is continuous, incremental improvement i.e., progress. Determination, persistence, consistency and striving to be a little better every day is the surest path to operational excellence.
Unfortunately, many restaurant operators suffer from FTI - failure to implement. For instance, most operators understand the value of training, but they never seem to get around to completing the "perfect" training program, so rather than making small, incremental improvements, they keep using what they have.
A little progress every day adds up to big results.

One trait of EVERY highly successful restaurant we've ever worked with is that they are focused on improving. Their training programs, like all their systems and processes, are always subject to review and are viewed as a perpetual work in progress. They are obsessed with constantly looking for ways to make their systems and processes better.
Maybe your restaurant doesn't have the greatest training programs, but that shouldn't keep you from making improvements along the way. Sometimes all it takes to get started is to simply set aside some time with your managers or key employees to decide on what it would take to be exceptional at one specific position at a time. Job descriptions, opening and closing procedures, menu knowledge and proper sanitation techniques are just a few things to consider when developing an effective training program.
What about your restaurant? What improvements could you make that could have an immediate impact on your success? What if you devoted 1 or 2 hours a week to come up with ideas and work toward their implementation?
No restaurant has ever reached a state of perfection. Instead, do what successful, world class restaurants do — focus on progress. How could your restaurant get just a little better every day?
