Closing Time
As lunch service gives way into dinner, and the evening's tally is done, closing a restaurant is as important as opening it -- maybe more so. Each restaurant has a standard operating procedure for locking up, but before turning off the lights, more than a passing look is needed. The kitchen is full of potential problems that can flare up during the early morning hours. It's important that the closing manager knows that everything is in fine working order before they enter their security code on their way out. If a beverage cooler starts to head south and warms up, no real loss. But not checking to see that the walk-in cooler is running at temperature could cost the house thousands of dollars by morning.
